The biggest issue you will face when baking banana bread without a loaf pan is a raw center.

Generously grease and flour a 9 or 10 cup bundt pan.
Butter or oil your loaf pan.
A loaf pan is the best utensil for baking banana bread.
Stir just to moisten.

In a medium bowl whisk together flour baking powder and salt.
